Crispy Chickpea Couscous Bowls

These bowls are ideal for the nights when everyone is hungry at slightly different times. The components hold well, and the chickpeas stay crisp enough for a second helping.
It is a flexible dinner, but the lemony tahini ties everything together.

Crispy Chickpea Couscous Bowls
Spiced roasted chickpeas, tender couscous, chopped vegetables, and a lemony tahini drizzle for a no-stress dinner bowl.
Ingredients
- 1 can chickpeas, drained and dried well
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1 cup couscous
- 1 cup hot water or broth
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/4 cup tahini
- 1 lemon, juiced
- 2 to 3 tablespoons water
- Salt to taste
Method
- Heat the oven to 425°F. Toss the chickpeas with olive oil, paprika, cumin, and salt, then roast for 20 minutes, shaking once.
- Meanwhile, cover the couscous with the hot water or broth and a pinch of salt. Let stand 5 minutes, then fluff.
- Whisk the tahini with lemon juice, water, and a pinch of salt until pourable.
- Divide the couscous among bowls and top with chickpeas, cucumber, and tomatoes.
- Drizzle with tahini sauce before serving.
Notes
- Add chopped romaine or herbs for more freshness.
- Roasted cauliflower is a good addition when you want a bigger bowl.
