Tomato-Braised White Beans and Greens

When the fridge looks sparse, beans, tomatoes, and greens can still produce a deeply satisfying dinner. This one leans on olive oil and garlic rather than long ingredient lists.

Serve it with toast, rice, or a fried egg on top.

Tomato-Braised White Beans and Greens

Ingredients

  • 3 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, sliced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can crushed tomatoes
  • 2 cans white beans, drained and rinsed
  • 4 cups baby spinach or chopped chard
  • 1/2 cup water or broth
  • Salt and black pepper to taste
  • Lemon wedges for serving

Method

  1. Heat the olive oil in a deep skillet. Cook the onion with a pinch of salt until soft, about 5 minutes.
  2. Add the garlic, paprika, and oregano and cook for 30 seconds.
  3. Stir in the tomatoes, beans, and water or broth. Simmer for 10 minutes, stirring now and then.
  4. Fold in the greens and cook until wilted. Season with salt and pepper.
  5. Serve with lemon wedges for squeezing over the top.

Notes

  • A spoonful of Greek yogurt or labneh on the side is excellent.
  • Use kale if you have it; just simmer it 5 minutes longer.
