Lemon Oregano Sheet Pan Chicken

This is the sort of dinner that makes a weeknight feel more generous than rushed. A few pantry spices, olive oil, and plenty of lemon do most of the work.
The vegetables roast in the same pan as the chicken, so you get sweet edges, savory drippings, and very little cleanup.

Lemon Oregano Sheet Pan Chicken
Bone-in chicken thighs roast with fennel, red onion, and lemon until the pan juices turn glossy enough to spoon over rice or torn bread.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 fennel bulbs, sliced into wedges
- 1 large red onion, sliced
- 2 lemons, one sliced and one juiced
- 4 tablespoons extra-virgin olive oil
- 3 garlic cloves, grated
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon black pepper
- 2 tablespoons chopped parsley
Method
- Heat the oven to 425°F. Line a sheet pan with parchment for easier cleanup if you like.
- Toss the fennel, onion, lemon slices, 2 tablespoons olive oil, half the oregano, and a pinch of salt directly on the pan.
- In a bowl, rub the chicken with the remaining olive oil, garlic, lemon juice, oregano, salt, and pepper. Nestle the chicken over the vegetables.
- Roast for 30 minutes, or until the chicken is deeply golden and reaches 165°F in the thickest part.
- Scatter with parsley and spoon the pan juices over everything before serving.
Notes
- Boneless thighs work too; start checking at 22 minutes.
- Serve with couscous, rice, or a bowl of yogurt with extra lemon zest.
