Skillet Turkey Kofta with Herbed Yogurt

These kofta are weeknight-friendly because they skip the grill and cook quickly in a skillet. Turkey stays tender thanks to grated onion and olive oil in the mixture.

Skillet Turkey Kofta with Herbed Yogurt

Ingredients
- 1 pound ground turkey
- 1/4 small onion, grated
- 2 garlic cloves, minced
- 2 tablespoons chopped parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 tablespoons olive oil, divided
- 3/4 cup Greek yogurt
- 1 tablespoon chopped dill or mint
- 1 teaspoon lemon juice
- Salt and pepper to taste
Method
- In a bowl, combine the turkey, grated onion, garlic, parsley, cumin, coriander, 1 tablespoon olive oil, 1 teaspoon salt, and a few grinds of pepper.
- Mix the yogurt with dill or mint, lemon juice, and a pinch of salt.
- Shape the turkey mixture into 8 short logs or patties.
- Heat the remaining olive oil in a skillet over medium heat. Cook the kofta for 5 to 7 minutes per side until browned and cooked through.
- Serve hot with the herbed yogurt and flatbread or salad.
Notes
- Wet hands make shaping easier.
- A chopped tomato-cucumber salad is a perfect side.
